I’ll admit, the first thing that grabbed my eye in this title was the word “pecan.” Pecans are one of my favorite foods thanks to their naturally buttery and indulgent flavor and the fact that they help you maintain healthy cholesterol levels. It’s true. And that makes me so happy!
Now I’m not normally a person who prefers nuts in her baked goods, but every once in awhile there’s a recipe where they are absolutely perfect, and this is one of those recipes. These cookies have the two hits of pecans mentioned above, plus toasted coconut and chocolate chunks. It almost has the makings of a German chocolate cake but in portion-controlled cookie size. Bake so up this weekend and enjoy with a cold glass of milk, and nix any guilty feelings you may have about eating dessert. After all, those pecans are good for your cholesterol!
