Southwest Quinoa Salad
My friend hosted a get-together today and requested I bring a side dish. Since these are health-conscious friends I knew I wanted to bring something healthy, but since we’re all foodies, it had to be equally yummy. Enter this Southwest Quinoa Salad. It was a hit!
This salad is so easy to make and fantastically healthy! It’s got plenty of protein from the quinoa and black beans, and lots of fiber thanks to all the veggies in it. The cilantro really punches up the fresh flavor profile. My husband and I added one seeded and chopped jalapeno pepper because we needed to use it up before it went bad, and it was really quite tasty in the mix. Also, we cut the cumin down to 1 teaspoon since we were getting low, and the dressing was still fantastic.
Please promise me you’ll make this recipe this week, it’s so good! And since this salad is something that tastes even better the longer you let it sit before serving, this is a great dish to make in advance when you know you’re going to be busy.
