Hooray for another healthy and easy sheet pan dinner! And I’m loving the way this one helps you to eat your rainbow of fruits and veggies for the day.
This is a simple recipe consisting of chicken marinated in a honey, lemon, and lemon pepper mixture and then cooked up with some broccoli, red onion, and orange bell peppers. Of course if you don’t like one of these veggies, feel free to swap it out for something you do enjoy. To make life easier I pick up a frozen bag of red, orange, and yellow bell pepper slices from Trader Joe’s and then add in some frozen broccoli florets. That way all I have to do is marinate the chicken and slice my onion before throwing everything together and into the oven. Enjoy this easy, delicious, and healthy recipe!
