Healthy Cauliflower Fried “Rice”
“Ok so this is a game changer folks. Looks like your typical fried rice, eh? You know…every person’s take-out dream that we like to order on those cheat days when we don’t want to count our calories. Well no need to cheat with this version! This entire recipe is nothing but veggies and you honestly wouldn’t know the difference. Oh and the best part?? A typical serving of fried rice from your favorite take-out restaurant can run you over 529 calories (um no thanks), but you can enjoy this delicious “rice” for only 131 calories!”
I recently completed my first round of Whole30 and was delighted to be introduced to cauliflower rice through it. And even though my round is over, I’m still loving my cauli rice! Especially when it’s as delicious as this fried “rice” from Eat Yourself Skinny. It totally beats traditional takeout, and can even be made Paleo or Whole30 friendly by omitting the sugar and substituting the soy sauce with coconut aminos. And if you wanna speed things up, you can always pick up a bag of already riced cauliflower from your local grocery store. Yum!
