I can’t get enough of soup lately, and I’m so happy with this latest find! I’m sure you will be too. This Creamy Mexican Corn Chowder is chock full of veggies and plenty of protein. Plus, it has cheese and those Mexican spices that we all love. I like mine a bit on the spicy side so I increase the amount of chili pepper and cumin and add a bit of cayenne. Then when I serve it up I add some sour cream, a squeeze of lime juice, and more cheese. With tortilla chips on the side, of course.
