“This Cajun Shrimp Alfredo Casserole is full of bold and zesty flavors, it’s easy to prep ahead of time, and it’s totally comforting and delicious.  Feel free to sub in chicken or smoked sausage in place of the shrimp (or to go along with the shrimp), if you’d like.”

Mmmm. I’ve never had a casserole like this one before, and this is definitely what my husband refers to as a “repeat recipe.” Creamy, spiced-up homemade alfredo sauce (that’s totally better than anything you’d buy at the store, by the way) enrobes a delicious combination of shrimp, bell peppers, red onion, okra, and rice. And if you’re like most of my family members and don’t care for okra, simply leave it out. Enjoy!
