Tomato-Basil Mac and Cheese is exactly what you didn’t know your summer was missing. Let’s face it, mac and cheese is fabulous any time of year, but when you can add in fresh tomatoes and basil from your garden it’s even better! And even though this recipe is written as a gluten-free recipe, you can totally substitute in regular all-purpose flour and macaroni noodles if you prefer. And if you want to bulk up your dish and make it a bit more substantial, I highly recommend tossing in a little grilled chicken, perhaps with a parmesan crust on it.
