Spiralized Winter Veggie Gratin
“Spiralized vegetable gratin is made with sweet potatoes, butternut squash, carrots, and parsnips and topped with a white sauce and Gruyere cheese. This dish can be prepped a day or two ahead, everything from spiralizing the vegetables, roasting them and making the white sauce.”
This is a great side dish to have on hand this time of year. It looks special enough that it’s holiday table-worthy, but is simple and affordable enough to have with your daily dinner. If gruyere cheese is out of your budget, try substituting it with Swiss cheese. The flavors are similar and your dish will still be fabulous.
