Skinny Zuppa Toscana
Hooray, fall is officially here! But just because the weather is cooling off doesn’t mean that you have to forget about eating healthily while still enjoying some comfort food.
I’m happy to healthfully usher in the new season with this Skinny Zuppa Toscana. Chock full of nutritious kale, potatoes, onions, and garlic combined with protein-rich Italian turkey sausage and bacon, this soup will leave you feeling full and satisfied. If you want to make the soup even “skinnier”, try substituting turkey bacon for the regular bacon. I like to serve this with a side salad for some extra veggies and a hunk of bread for dipping.
