Hooray for all things sweet potato! Like Jaclyn from Cooking Classy, I like to save cooking with sweet potatoes for the cooler months, and since school has been in session for weeks now in our neck of the woods and Labor Day has passed, it certainly feels like fall to me. Enter this easy, healthy, and perfect-for-a-busy-school-night meal.
By now you all know I love sheet pan and one-pot meals and the myriad of reasons why. But especially when they’re as tasty and healthy as this one! Chicken for lean protein, sweet potatoes for fiber and vitamin A, and brussels sprouts for vitamins C and K. This is definitely a regular on our dinner rotation now, and sometimes I think I’ll sub in a little sausage for the chicken. Yum!
