Pesto-Parmesan Baked Tomatoes
There is nothing like tomatoes fresh from the garden, especially if they’re baked with pesto and parmesan cheese. It elevates them to a whole new level. The tomatoes are warm and juicy, the pesto adds some fresh herbaceous flavor, and the parmesan cheese adds a nice saltiness.
These tomatoes are incredibly easy to make: just slice, top with pesto and cheese, and bake. I love it when I broil them for a short while after baking so that the cheese gets crispy and brown. They’re fantastic with pasta, grilled chicken or steak, and make an amazing twist on a classic BLT sandwich.
