One-Pan Chicken Fajita Rice
Confession: I’m not much of a rice eater. Honestly, I really only prefer it with my Asian food– especially sushi. But since the rest of my family loves it I occasionally make and eat it for dinner so they can all enjoy some. And now I may have changed my mind after trying this rice dish. It’s fantastic, full of flavor, and so creamy.
This recipe is really quick and easy to make, and since it’s cooked up in one pan clean up is pretty quick and easy too. And if you want to take a page from my book, sprinkle on some shredded cheddar or Mexican cheese on top of this baby. The original recipe is still great without the cheese, but cheese makes everything better, amirite?!
