Primarily because corn is my favorite veggie, Mexican Street Corn is my favorite way to enjoy said veggie, and adding pasta for a self-proclaimed carb-addict was the best.decision.ever. Also did I mention avocados, lime, cilantro, jalapeños, cheese, green onions, and BACON?!”
This salad is fantastic, you guys. So much so that I find myself wanting to eat it for lunch every single day. Grilled corn, avocado, jalapeño, bacon, pasta, and cheese come together in a creamy, lime-y dressing that is mouthwateringly good. I took Chelsea’s advice and added in the black beans for extra protein, and I liked it even better than the original recipe. Try it out soon, it’s yummy!
