Mandarin Orange Spinach Salad with Chicken and Lemon Honey Ginger Dressing
Man, oh man, I love this salad recipe! I’ve always enjoyed the Oriental Chicken Salad from Applebee’s but it’s really awful for you. This recipe reminds me a little bit of that salad but with a healthier spin.
One really cool thing about the mandarin-spinach pairing you might not know: the vitamin C in the oranges actually helps your body to better absorb the iron from the spinach. And the ginger in the dressing helps improve digestion. If you’re looking to lighten up the calorie count of the salad a little bit, just leave out the fried wonton strips. As for me, however, I’ll rearrange my calorie intakre for the day just so I can keep them because they add a really nice crunch.
