Homemade Beer Cheese Soup

There are times when I enjoy a broth soup. Usually, that is when the soup comes with a salad or a sandwich. Then there are those days when you want a soup that will be a meal in itself. This would be one of those kinds of soup. However, I would not hesitate at eating this soup with some sliced bread or something yummy to dip into it too.”
Yum oh yum oh yum! Beer cheese soup is a longtime favorite, and this recipe for it is simply fantastic! It starts with sauteeing carrots, garlic, and onion in butter. (I also like to add celery as a nod to a traditional mire poix and to sneak more veggies in.) Next comes the chicken stock, beer, and milk. Once that’s simmered awhile you add in your mix of cheeses and seasonings and then simmer until it’s ready to serve. I like to serve this soup with a hunk of bread and then sit back and bask in the compliments that will inevitably come when I serve this soup to my family.
