Healthier French Onion Meatloaf

Meatloaf is a classic American comfort food but sometimes it’s not the healthiest dish. However, this recipe for French onion meatloaf is far healthier than the norm. It’s made with almond milk, oats, and lean ground beef. I first made this back when I was pregnant with my son and it was so tasty that I made sure to make and freeze a few for after the baby was born. I wanted to be sure I could have it right when I wanted it!
Now let’s talk substitutions for those of you who want them. First, the almond milk. If it’s not your jam, just substitute it with an equal amount of regular cow’s milk. Second, the gruyere cheese. I know gruyere can be a bit pricey, so for those of you on a stricter budget opt for a swiss cheese or emmentaler, jarlsburg, or grand cru. However you end up making this meatloaf, I can tell you it’s delicious!
