Garlicky Tomato-Basil Shrimp with Zoodles
“This recipe is all-summer and really only has 4 major components. Spiralized zucchini or “zoodles” (I’m sharing my tips to avoid watery zucchini noodles below!) are topped with a toss of fresh tomatoes and basil, and quickly seared garlicky shrimp. Have you hopped onto the zoodles bandwagon yet? We most certainly have in our house. The kids love making the spiralized zucchini noodles and have even more fun eating them while I love how healthy and low-cal they are. And while we normally do our zoodles with meatballs and red pasta sauce, this is my new favorite way to serve them. Quickly cooked and healthy shrimp along with fresh basil, tomatoes, and garlic really cannot be beat! This is so good that I’m confident it will be your new favorite summertime dinner.
