I’ve baked (and subsequently frozen) roughly fifty loaves of zucchini bread this summer, and I’m not even exaggerating. And even so, my garden keeps putting forth zucchini quicker than we can pick and eat it! So when you’ve got an abundance of zucchini but are tired of your go-to recipes, I urge you to try out these Carrot Zucchini Spice Muffins. They’re sweet with a bit of spice that transitions nicely into fall, and they are so, so good. I prefer to keep mine plain like those pictured above, but a sweet glaze would be really nice on them too.
