Asian Cucumber Salad
“You need to promise me that you are going to make this Asian Cucumber Salad. The flavor is so fresh, tangy, crunchy, delicious that I almost couldn’t stop eating it to shoot these pictures! Holy Hannah is this good! The best part is, it takes only minutes to make. The only hard part is slicing the cucumbers because they need to be pretty thin. BUT … if you have a Mandoline, use it, it will make your life much easier.”
Oh, holy moly, I have discovered my new favorite salad recipe. And I’m hoping it will be yours too! Thinly sliced cucumbers mingle with ribbons of red onion and bits or red bell pepper and are dressed with a winning combination of rice wine vinegar, toasted sesame oil, honey, red pepper flakes, salt, and sesame seeds. YUM.
